Please Note
There are two seatings: the First Seating offers a short course experience at $270 per person, while the Second Seating provides a long course experience at $365 per person.
Meet the Chef
Akira Horikawa
With over 30 years of culinary experience, Chef Akira Horikawa is a master of Omakase sushi, renowned for his expertise and precision.
He spent 15 years perfecting his craft at the legendary Ginza Kyubey, one of Japan’s most iconic sushi institutions, pivotal in the history of Edo-mae sushi. Ginza Kyubey, with over a century of tradition, is where the famous gunkan (ship-style) sushi was born, revolutionizing how ingredients like uni and ikura could be served. Chef Horikawa’s time at this iconic establishment saw him crafting seasonal menus for a high-profile clientele, including notable presidents, politicians and international celebrities.
At the heart of Chef Horikawa’s approach, his Omakase dining experience is both authentic and intimate. Despite English not being his first language, Chef Horikawa’s passion for sharing knowledge and his warm, approachable style create an engaging connection with his guests, ensuring that each bite is an experience to remember.
Tomoyuki Matsuya
Chef Tomoyuki is a widely recognized second-generation sushi chef in Sydney, currently also leading an immersive Omakase experience at Azabu Chef’s Table. His extensive experience includes managing various venues within the Azabu Group portfolio, such as the One Hat restaurant Kame House, Chef’s Table, and Choji Omakase.
Previously, Chef Matsuya was an Omakase chef at notable establishments including Azuma Japanese and HaNa-Jurin, as well as operating his own ramen joint, which gained a cult-like following.
During the COVID lockdown, Chef Matsuya stayed connected with his customers by creating a beautifully crafted “Next Gen Chirashi” project alongside his daughter, which became an instant sell-out success and was featured on the covers of various media outlets.
