Meet the Chef

Derek Kim 

Chef Derek Kim takes the helm at Garaku, bringing with him a rich background of experience and a deep passion for Japanese culinary traditions. His career is marked by dedication to precision and creativity, most recently during his time as Executive Head Chef at Tetsuya’s in Sydney. There, Chef Kim honed his expertise in fine dining and leadership, excelling in managing a high-performing kitchen team.

He has also gained invaluable international experience in Europe at notable restaurants including Public Dining Room and Restaurant Copenhague in France, where he absorbed diverse European culinary styles. 

His leadership and wealth of experience will help write an exciting new chapter at Garaku when it launches.
