Suntory Bar takes over Whisky Thief at Prefecture 48 for a vibrant three-month pop-up, transforming the heritage space into a celebration of pioneering drinks. Set across two levels, the bar captures Japan’s renowned hospitality, known as Omotenashi, inviting Sydneysiders to experience the authentic Suntory space designed for Nomikai post-work ritual. Enjoy highballs, inventive cocktails and exclusive snacks, crafted by culinary greats and the team at Suntory Oceania. A sensory immersion in Japanese culture, reimagined.

The Suntory Bar’s projection and arts reimagines the heritage setting of Whisky Thief through a distinctly Japanese lens, fusing tradition with modern flair. As guests enter the tunnel, they’re immersed in over 125 years of Suntory’s rich history, followed by  a dynamic projection showcasing the brand’s care for nature, craftsmanship,  ‘Growing for Good’ and their products. Product displays are integrated throughout, offering an engaging journey through Suntory’s celebrated spirits.  This unique, multi-sensory experience not only honours the past but also captures the innovative spirit of contemporary Japan, an elevated space where history, artistry and hospitality collide.

What is Suntory Bar?
Suntory Bar is a three-month pop-up in Sydney’s Prefecture 48, celebrating Suntory’s iconic beverages, particularly their spirits, highballs, and cocktails.

What are the opening hours?
Tuesday to Thursday 5pm-11pm, Friday & Saturday 5pm-12am, close Sunday & Monday
Do I need to book?
Walk-ins are welcome, but bookings are recommended. Visit P48.com.au/SuntoryBar to secure your spot.
What cocktails are on the menu?
Expect effervescent highballs, rice-vodka Martinis, seasonal G&Ts, creative classics, and innovative whisky serves.
What food is available?
Small bar bites to larger plates, the menu features signature snacks by Tetsuya Wakuda and paired plates from hatted restaurant Ibushi.
Will there be guest chef or bartender events?
Yes, the bar will host international talent with special menus and events – stay tuned via our socials.
Is Suntory Bar family-friendly?
Suntory Bar is an adults-only venue, strictly 18+.

Yes! Whisky Thief is very much alive, it’s simply been reimagined as Suntory Bar for a special three-month residency. The same talented F&B team is behind the bar and kitchen, now bringing uniquely Japanese drinks experiences with Suntory.
What’s the difference between Whisky Thief and Suntory Bar?
While Whisky Thief focused on global whisky and cocktails, Suntory Bar is a dedicated celebration of Suntory’s Japanese spirits, cocktails and culture. Expect a transformed space, a curated Suntory menu, and exclusive experiences, all crafted by the same team for three months.
Can I book Suntory Bar for corporate tastings?
Absolutely. Suntory Bar offers bespoke corporate tasting packages, featuring guided experiences with premium Suntory whiskies like Yamazaki, Hakushu and Hibiki, plus curated cocktails and canapés. Perfect for team events, client entertaining or special celebrations.
